Before I get started, I will clue you in that this ended up being a long post. You may want to get your bathroom trip out of the way and refresh your drink. Then, find a comfy place to chill-ax and take a break with me.
Back in my home state of NY there is a local restaurant that makes a delicious Buffalo Chicken Pizza. I wanted to recreate it for myself because I never make the trip to that restaurant when I get back to NY because there is usually limited time to fit in all of the places I miss when I head back.
I have also been trying to recreate a Buffalo Chicken Wing Sauce that is close to the type that I like. Duff’s in Buffalo, NY (the birthplace of the Buffalo Wing) is one place that makes the type of wing sauce that I like. Crispy skin that seems to be soaked with sauce but is not a goopy saucy wing is my ideal chicken wing. The sauce itself has a tang to it that makes you want to dip your French fries and celery, your partner’s food and anything else you can find in it…maybe even just drink it with your spoon.
These recipes are really close to the taste that I am missing when I want chicken wings and Buffalo Chicken pizza.
There are a few steps but the nice thing is that you can do them at different times. I made the chicken wing sauce first and it is actually better if it sits overnight. Then I made the blue cheese dip and that can sit overnight as well.
For the pizza dough, I just used a frozen dough that I thawed and stretched out myself. Feel free to make dough if you have a recipe that you like. But it should be a real yeast dough crust to get that pizzeria-type taste.
The Buffalo Sauce and Blue Cheese Dip can be made ahead of time and kept in the refrigerator if need be. That was helpful for me since making the pizza from start to finish was not going to happen in my world!
Make sure that you have given your dough time to be ready for when you want to assemble the pizza.
Also, check the Ingredients lists to make sure you have what you need.
Buffalo Chicken Pizza
Buffalo Chicken Wing Sauce
8 tablespoons Frank’s Original Red Hot Sauce (try to use Frank’s Original – I have tried with the wing sauce version and it is not the same)
8 tablespoons unsalted butter, softened
1 1/2 tablespoon white vinegar (I used seasoned Rice Vinegar for a little flavor)
1/4 teaspoon cayenne (optional)
1/4 teaspoon garlic powder (or less if you do not like as “garlicky”)
3-4 splashes of worcestershire sauce
Combine all ingredients in a saucepan and simmer on a very light bubble for 15-20 minutes. Add more “heat” if you need to adjust the taste.
Remove from heat and let cool a bit.
You can use the sauce now, but I discovered that refrigerating it overnight made the flavors and ingredients blend into a much better “sauce”. Give it a stir. If you prefer or need to reheat it, you can use the microwave for short bursts at a time or use the stovetop just to warm it. If you are adding hot wings to the sauce then you really do not need to reheat it. The hot wings will take care of that for you!
Blue Cheese Dip
I like the Pioneer Woman’s version of Blue Cheese Dip so I used that and just tweaked it a bit.
1/2 cup mayo
3/4 cup sour cream
3-4 dashes of Worcestershire sauce
1 cup Blue Cheese Crumbles
1/8 tsp garlic powder
salt and pepper to taste
Combine all ingredients and refrigerate.
Ok…now you are ready to assemble your pizza.
Buffalo Chicken Pizza
You will need:
– pizza dough for one pizza
– Buffalo Chicken Sauce, softened and spreadable
– Blue Cheese dip (save some for dipping later)
– 1 to 2 cups chicken of your choice, cut or shredded (ready made strips work perfectly, or you can pan fry raw chicken, or used breaded chicken nuggets) For this pizza I cooked 3 raw chicken strips.
– 1/3 cup pizza sauce/pasta sauce
– mozzarella cheese, enough to cover the pizza to your liking
– garlic powder, salt and pepper
– celery and carrot sticks, as garnish, optional
Roll or hand spread your pizza dough and fit it into your pizza pan of choice.
I like to add a bit of pasta sauce with the Buffalo Chicken Wing Sauce because an all-wing sauce pizza gets to be too overpowering. You really do not even notice the pasta sauce, it just adds a heartiness. Spread the 1/3 cup of pasta sauce around the pizza.
Next, put your cut up chicken pieces into the Buffalo Chicken Wing sauce to coat. Scoop the chicken onto the pizza including the sauce and spread around with the pasta sauce.
Top with mozzarella cheese.
Dollop the top of the mozzarella cheese with blue cheese dip, as much or as little as you like. It will make the mozzarella cheese creamier.
Sprinkle garlic powder over the cheese along with salt and pepper.
Bake in a 400 degree oven for 20-25 minutes, until the cheeses are golden and a bit bubbly and your crust is done.
Let cool for a minute so that your cheese does not just slide right off of your pizza.
Include slices of celery and carrots along with extra blue cheese dip – you can dip your veggies and even your pizza!
