Sweet Summer Salsa


Our “end-of-summer” has been hotter than our summer was and I am totally enjoying it. Steamy, humid and not at all like fall is coming. I love fall and enjoy every moment of it but I can wait a little longer for it!

This would make a refreshing treat to take along to your end of summer festivities or to pack up in individual mason jars to give to your guests and a great way to enjoy the season’s fresh harvests.

You can easily double or triple the recipe to fit your needs.

Sweet Summer Salsa

You will need:

1 cup each, diced: watermelon, cantaloupe, pineapple, nectarines, cucumber and tomato
1 – 2 tablespoons chopped scallion/green onion
1 – 2 tablespoons chopped fresh basil (1/4 to 1/2 teaspoon dried)
a sprinkling of garlic salt/salt

Mix all of the ingredients and let sit for flavors to blend. Refrigerate if you will not be serving right way and toss right before you serve it.
