We had a guest this summer who reminisced that when she was a kid, she would have this rice krispy treat ice cream pie at a friend’s house and she loved it. So, we decided to make it!
This frozen pie is made with a rice krispy treat crust instead of a graham cracker crust. You could mix up any combination of ice cream and toppings but this simple version with vanilla ice cream and sweetened strawberry sauce is her favorite…for the taste…and the memory.
Make a batch of the traditional rice krispy marshmallow treats for the pie crust. Here is the marshmallow rice krispy crust molded into a pie pan.
Top the crust with a really good quality vanilla ice cream. Then, plop it into the freezer. When you are ready to eat it, spoon on a strawberry sauce (I used the premade one from the grocery store that is a little sweetened since that is how the original was made but you could make your own).
Because we were so excited to eat this pie, I forgot to take pictures of it once we added the yummy strawberry sauce.
Just visualize a beautiful red strawberry sauce spooned over the top…oh it was so yummy!
Rice Krispy Treat Ice Cream Pie
6 cups crispy rice cereal
1 package regular size marshmallows
3 tblsp soft butter
1 carton good flavored vanilla ice cream
1 container (16 oz.) sliced strawberries in juice, sweetened – or make your own
Butter a pie plate and set aside.
To make the rice krispy treat crust, melt the butter and marshmallows over medium low heat in a saucepan. Turn off the heat and stir in the rice krispies to thoroughly coat. Place some of the treat mixture in the pie plate and begin to mold it, making sure that the crust has sides to keep the ice cream inside. Keep adding the treat mixture until the crust is 1/2 inch to 1 inch thick. You will have treat mixture left over, but I won’t tell if you don’t!
Let the crust cool completely then add the vanilla ice cream. Place the pie in the freezer. Spoon strawberry sauce over the ice cream when you are ready to serve.
