Pumpkin Spice Kiss Cookies

One of my favorite cookies as a child from the holidays was my mom’s Hershey Kiss cookies. Not the ones with the Hershey Kiss on the outside of the dough, but the ones where the Hershey Kiss is completely covered by cookie dough. Oh, yum!

On a recent grocery trip I saw that Hershey had Pumpkin Spice Kisses available so I decided to buy them and switch up the cookie a little.

It was a nice change and they were delicious!

I used the dough to make about half of the cookies in the Pumpkin Spice flavored kisses then I decided to get creative.

It did not work.

I love the dough so much and thought I would make a chocolate covered cherry cookie. The chocolate chips did not melt so they are not pretty. The cookie dough was too hard to get out of my mini-cupcake pan so they ended up mostly smushed. They taste ok, but were not exactly what I was going for.

So, do not try this at home!

Gather:

2 sticks of softened butter (I used 1 unsalted and 1 salted stick)
1/3 cup white sugar
1/3 cup brown sugar
1 tsp vanilla extract
2 cups flour
1/8 tsp salt
1/4 tsp pumpkin pie spice
1 bag Hershey’s Pumpkin Spice Kisses

Preheat oven to 375 degrees.

Mix butter, sugars and vanilla together in a large mixing bowl. Add flour, salt and pumpkin pie spice and mix together. Chill dough for 30 minutes then mold a heaping teaspoon size of cookie dough around one Hershey Kiss candy into a ball. Cover the candy completely and place on an ungreased cookie sheet 2 inches apart. Repeat with all the dough and kisses until one of them runs out!

Bake for 10-12 minutes until bottoms are just barely browning. Cool for a few minutes then remove to a cooling rack to cool completely.
