Scandinavian Almond Cake

I received this fabulous pan as a gift along with a recipe for Scandinavian Almond Cake. The pan was recently purchased at a German Christmas Market and I couldn’t wait to try it out.

I made the cake as the recipe indicated but the next time, I would cut down on the sugar by at least 1/4 cup because it is very sweet…at least for me! I also added sliced almonds to the top of the cake, ya know, since it is an almond cake and all….

Scandinavian Almond Cake

  • Difficulty: moderately easy

Beat well:
1 1/4 cup sugar
1 egg
1 1/2 tsp almond extract
2/3 cup milk

Add: 1 1/4 cup flour, 1/2 tsp baking powder
Add: 1 stick melted butter or margarine and beat mixture well

Spray pan generously using cooking spray immediately before pouring batter into pan.

Bake at 350 for 40-50 minutes, until edges are golden brown and toothpick inserted into center comes out clean.

Cool a few minutes and then turn out onto a plate to cool.

Sprinkle with powdered sugar before serving.
