This is a family recipe that my grandmother used to make for the birthdays in the family. It was shared with me a while ago and I dusted it off and made it for a recent birthday in our house.

It’s beautiful in its “birthday suit” (look at those cherries and nuts) but topping it with a Maraschino Cherry Frosting “takes the cake” and it is sure to become one of your favorites!
Chocolate Cherry Cake
1/2 cup shortening, butter or margarine
1 cup sugar
2 – 1 oz. squares of unsweetened chocolate, melted (you can melt in microwave in 10 second increments)
1 1/2 cups sifted CAKE flour
1 tsp. baking soda
3/4 tsp. salt
1 cup milk
1/4 cup chopped maraschino cherries
2 Tblsp. maraschino cherry juice
1/2 cup chopped walnuts
Preheat oven 325 degrees. Grease 8x8x2 square baking pan.
Stir shortening/butter to soften. Add sugar and beat until light and fluffy. Add egg and beat well. Stir in melted chocolate.
Sift together dry ingredients in separate bowl, then add to creamed mixture alternatively with milk, a little at a time beating smooth after each addition. Add cherries, cherry juice and nuts and stir to combine.
Pour into greased pan and bake for 50-55 minutes, until toothpick comes out clean. Cool.
My recipe says to frost in the pan…can’t you just see grandma doing that and then serving it? I took it out of pan and used a pedestal plate and dolled it all up that way. You choose!

I only made 1/4 of the frosting by cutting the recipe into quarters because I do not like too much frosting. I forgot that I was going to get all “Baker” about it and add decorative frosting to the top and then I did not have enough frosting to go that route.
A tip from me…decide how you want to decorate and then plan the frosting amount accordingly!
